Meet the farm: from miniature horses to water buffalo

The farm is not a backdrop. It is part of the kitchen, part of the brewery and part of your stay.

The animals

Miniature horses, miniature pigs, water buffalo, goats, sheep and calves live here. They are all very friendly, and you can pet the horses.

What we make

Our dairy gives us milk, butter, ghee, cheeses, yogurt, ice cream and cajetas. In the gardens we grow hydroponic lettuce, beets, tomatoes, cilantro and peppers, plus papaya, banana, plantain and other fruits.

A closed loop

Spent grain from the brewery feeds the animals, a biodigester and composting return nutrients to the land, and our organic soils keep producing for the restaurant.
